Our fresh flour is stone milled just for you when you tell me you’re coming to pick it up. Einkorn is an ancient grain, known as the oldest wheat, dating back over 10,000 years to southeastern Turkey. It’s the simplest form of wheat on the planet, with only 14 chromosomes. Modern wheat has 42 chromosomes. Einkorn lacks the D chromosome, which may cause wheat sensitivities in some people.
It’s easier to digest, has a mild nutty and sweet taste, and is high in protein and nutrients. Though high in protein, its gluten is different and less stretchy, so less kneading preserves the dough’s quality.
We sell Organic Einkorn Whole Wheat for 55 cents an ounce or $8.80 per pound.
You can upgrade to a glass mason jar with an air seal, sold separately (jar weight deducted). Our hand-crafted stone mill grinds slowly at low temperatures, keeping the flour fresh and full of rich flavor and aroma.
