We sell freshly stone milled (FSM) organic whole wheat flour by the gram and sourdough baked goods
We mill to order your flour just before you pick it up. It is vacuum sealed in an amber glass jar to maximize all the nutrients.
Baking is done once a week. You can pick it up baked goods on Sundays from 9 am to 5 pm near Carlsbad High School. The deadline to order for Sunday pickup is by noon on the Thursday before.

Nothing is sifted out, this is 100% whole wheat Einkorn sourdough loaf.
Not all sourdough is the same. If the flour isn't freshly milled, most nutrients disappear within 3–7 days, leaving mostly starch that spikes blood sugar. Freshly milled WHOLE WHEAT flour keeps the bran and germ, which slow glucose rise. Einkorn is an ancient grain, known as the oldest wheat, dating back over 10,000 years to southeastern Turkey. It’s the simplest form of wheat on the planet, with only 14 chromosomes. Modern wheat has 42 chromosomes. Einkorn lacks the D chromosome, which may cause wheat sensitivities in some people.
It’s easier to digest, has a mild nutty and sweet taste, and is high in protein and nutrients. The gluten structure in einkorn is very weak, hence why the breakdown and digestion is easier for our bodies however this is why you will never find a robust tall loaf of whole wheat einkorn bread.

We sell Organic Einkorn Whole Wheat for 37 cents an ounce = $5.92 per pound. You can upgrade to an amber glass mason jar with an air tight seal, sold separately (jar weight deducted; amber jar blocks light and UV to preserve nutrition.)
Once milled into whole wheat flour, nutrients fall off within 3–7 days and the whole wheat flour will become rancid in 2 weeks if not refrigerated and sealed in an air tight container.
