This is the ultimate loaf of sourdough purely for fiber purposes, not flavor.

This loaf is mostly freshly stone‑milled einkorn and spelt bran and germ. If you want very healthy sourdough loaded with minerals, vitamins, and insoluble fiber, this is it. It’s extremely low in starch and focused on the wheat berry’s bran and germ—the ultimate health loaf.

Ingredients: Filtered water, freshly stone milled (FSM) organic Einkorn and Spelt whole wheats’ bran and germ, active Einkorn levain, honey, and sea salt.

A 36–96 hour cold bulk fermentation reduces it further, leaving a nutrient-dense loaf with insoluble fiber and healthy fats.

We add 1 tablespoon of honey per loaf to help the bread rise a bit, also it act as a natural preservative while adding flavor.

USDA 100% Organic Einkorn and Rye Wheat Berries from mid western farmers — whole grain, food‑grade quality.

Our farmers never use Roundup, fulvic acid, 2,4‑D, or any other chemicals. They also test the Einkorn and rye berries to confirm they contain no glyphosate.

Each loaf is made with freshly milled whole/wheat and hand-shaped by me, your local miller. I slowly mix the dough and use a long, cold fermentation to create a probiotic sourdough.
