Rye began as a tough weed in wheat and barley fields in what is now Turkey/Asia Minor. It was likely gathered and grown over 8,000 years ago. Rye has an earthy, slightly malty taste and strong health benefits. Half a cup of whole rye flour supplies about 1/3 of daily fiber needs, making rye one of the richest fiber foods.
It’s protein rich and supplies many minerals and B vitamins. Rye has long been used for bread; because it’s low gluten, rye dough are dense unless mixed with high-gluten flours. Dense but so healthy for you.
Wheat berries stay good for up to 30 years if kept cool and dry.
